Susan’s flourless peanut butter chocolate chip cookies
Susan, one of the nurses I work with, brought these yummy cookies to the office and I had to get her recipe. These cookies don’t require a mixer and have only five ingredients! I use creamy unsalted peanut butter, which has lots of healthy monounsaturated fats and no added sugar.
Susan’s Flourless Peanut Butter Chocolate Chip Cookies Recipe
- 1 large egg
- ½ cup brown sugar
- 1 cup natural peanut butter (with no added salt or sugar)
- 1 tsp baking soda
- 1 cup chocolate chips
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper.
- Whisk egg, brown sugar, and baking soda together in a bowl. Stir in peanut butter and mix until well combined.
- Fold in chocolate chips.
- Scoop tablespoonfuls of batter onto a baking sheet. Bake 10 minutes until puffed and just beginning to turn golden around the edge. Do not overbake. Let cool 15–20 minutes before eating.
